It starts where every Thai cook starts: the market. At Big Buddha Market you are walked through the things that look interchangeable on a supermarket shelf and are not — galangal against ginger, the three parts of a lemongrass stalk you actually use, holy basil against Thai sweet basil, and which of the small chillies will end your afternoon. Then you cook: four dishes, from the paste up, in an open kitchen with a Samui family who have been feeding people for a long time.

It is four hours, capped at fifteen people, and it ends the way it should — sitting down and eating what you made. It is also, at ฿2,500, one of the cheapest ways to bring something back from the island that does not go in a suitcase.

👶 Age limits: the operator accepts ages 10 to 65. Under 9 and over 66 cannot join — it is a working kitchen with hot pans and knives.

How long is the cooking class and what does it cost?
Four hours, ฿2,500 per person, every day of the year. That covers the guided market visit, all the ingredients and equipment, the four dishes you cook and then eat, and the recipes to take home. Hotel pick-up is available — give your hotel name when you book.
Which dishes will I cook?
Four, and the exact menu shifts with what the market has that morning — that is rather the point of starting at the market. Expect a curry built from a paste you pound yourself, a stir-fry, a soup and a salad drawn from the Thai standards: green or red curry, pad thai, tom yum, som tam. Tell the host what you have always wanted to make and they will usually work with it.
Is it suitable for children?
From age 10, which is the operator's own limit, and the upper limit is 65. It is a real kitchen with hot pans and sharp knives rather than a play activity, so a ten-year-old who genuinely wants to cook will love it and one who was brought along may not. For younger families the Koh Madsum half day is the easier call.
Can you cater for vegetarians, vegans or allergies?
Yes, but say so at the time of booking rather than on the day. The shopping list is bought before you arrive, and fish sauce, shrimp paste and dried shrimp are in more Thai dishes than most visitors expect — including several that look entirely vegetable. Told early, it is a non-issue; told at the market, it costs you a dish.
How far in advance do I need to book?
Reservations close six hours before the class starts, which makes it the most flexible activity on our list — you can decide over breakfast to cook that afternoon. Free cancellation up to 24 hours before, and you can reserve now and pay later.
Is this a good rainy-day option?
It is the best one on the island. The kitchen is covered, the class runs every day of the year, and it is unaffected by the sea conditions that cancel boat trips between October and December. When a crossing gets called off, this is what we move people to.
